Ingredients

125g raw almonds
125g sugar
100g of peeled walnuts
1 egg

To paint:

Syrup (water and sugar)
1 yolk (reserve the white for the icing)

For the icing:

200g icing sugar
A few drops of lemon
1 egg white

Preheat the oven to 180ºC. We make the icing sugar by putting the sugar 5-10 progressive; we reserve. Then pulverize the almonds 5-10 progressive.
Add the icing sugar and the egg white, knead for one minute, closed glass, spike speed. Mosla dough from the glass, form a curl and divide it into three.
Without washing the glass, we put the peeled walnuts and grind for 2 or 3 seconds at speed 5. We can leave more or less large pieces depending on our taste. Add the egg yolk and stir for a few seconds at speed 3.
Sprinkle the work surface with icing sugar so that the dough does not stick to us and roll out a first part with a rolling pin, in a rectangular shape; then we extend half of the mixture of nuts and yolk.
Roll out the second part of the dough and place it on top of the walnuts. We put the rest of the walnuts on top and stretch the third part of the marzipan, this time, it has to be thinner, so that when we leave it on top of the other two, it covers them. With our hands we squeeze the edges and shape a rectangle, so that it is sealed.
With a brush or pastry brush, paint with the yolk and cook in the oven at 180º for 12 minutes or until golden. If necessary, we give a hit of the grill to get the right tone.
Meanwhile, we prepare a clear syrup as follows: in a glass we place a finger and a half of water and two tablespoons of sugar, heat in the microwave for one minute and stir well. When we take the bread out of the oven, we brush with this syrup to give it shine.
We put all the ingredients of the glaze in the glass, programming 20 seconds, vel.6. Pour the glaze into a sauce bottle or pastry bag and decorate.
