250 g sugar
5 egg yolks
250 gr of ground almonds
A pinch of cinnamon
Zest of a lemon

The only thing we'll be careful about is finding the exact point of cooking, so let's get started!
Put the egg yolks, sugar, cinnamon and lemon zest in a saucepan.
Add 50 ml of water and let everything cook for about 5 minutes without stopping stirring.
Outside of the fire, we add the almond, and mix everything well. We return to the fire and let everything mix over low heat for about 10 minutes.
We prepare an elongated mold, and we add the dough. We leave everything very smooth with the help of a spatula, and cover it. We let it rest for 24 hours.
The next day, we mix one yolk with two tablespoons of sugar. Unmold the nougat, and spread the yolk cream with the sugar over the nougat.
We burn the yolk with the help of a blowtorch, and let it rest for two days out of the refrigerator.
