Dulce de leche empanadas

Ingredients
For the empanadas:
- 400 g flour
- 120 g of sugar
- A pinch of salt
- 2 eggs and 1 yolk
- 150 g butter at room temperature
- Dulce de leche
Plus:
- 1 white to paint the surface
Music
Put the flour, sugar and a pinch of salt in a large bowl.
We mix.
We add the two eggs and the yolk.
We mix again.
We add the butter at room temperature.
We mix and integrate everything well with our hands.
We form a ball and let it rest for about 30 minutes.
We divide the dough into two portions to make it easier to roll out the dough.
We extend one of these portions with a rolling pin. I used baking paper so as not to stain the worktop. We can use a little flour if we consider it necessary.
We cut circles with a cookie cutter.
We put a teaspoon of dulce de leche in the center of each circle and close the discs to form the empanadillas.
We place the empanadas on a baking tray covered with baking paper and paint the surface of each empanada with egg white.
Bake at 180º for approximately 20 minutes.
