Parmesan foam, creativity in your dishes

The Kings have siphoned me off foam! I have premiered it with a delicious Parmesan cheese cream. Siphons allow us make creamy and airy foams without adding cream or whites, avoiding the consumption of fat and achieving a decorative and original touch in our recipes.

This time I have made a cheese one, which does contain cream and milk, but it is perfectly possible to make foams only with vegetables, since the siphon works by means of nitrogen charges that allow a pressure outlet of the liquid.
