This salad has a different touch than the Russian salad, yet it is equally delicious. Is native to the Piedmont region of Italy and it is believed that it was created during the time it was occupied by the French.
It is a cold dish that is prepared with boiled potatoes, pickles, Bologna mortadella or cooked ham, tomatoes and boiled egg. Then it is accompanied with an exquisite mayonnaise sauce with Dijon mustard.

Ingredients
- 600 g potatoes
- 3 boiled eggs
- 1 thick slice of bologna mortadella or cooked ham
- 6 sweet and sour pickles
- 2 small tomatoes
- 350ml mayonnaise
- 1 tablespoon Dijon mustard
- Sal Island
- Fresh parsley
Preparation
We wash well potatoes and we put them to cook inside a pot full of water with a little of salt. We cook them between 30 to 40 minutes. To know that they are cooked, we will pierce them with a knife and check if they are soft. When they are cooked, we remove the water and let them cool.
We put cook the eggs in a saucepan with water, during 12 minutes and with a pinch of salt. Once cooked, we remove the water and let them cool.
We cut into teaspoons the slice of the bologna mortadella. We wash and cut into small cubes the fresh tomato.
Peel the potatoes and boiled eggs. Cut the potato and egg into small pieces. We select the pickles and cut them into pieces.
We put all the ingredients into a large bowl and set aside.
In a small bowl we pour the Mayonnaise and the spoonfuls of mustard. We mix well and add it to the salad. We stir the whole thing well again.
We serve in a bowl accompanied by pieces of pickle and decorated with fresh chopped parsley.
