Get a different potato omelette with this proposal. It is a traditional omelette to which we have added a stuffed with pickled tomatoes, to give it a touch that you will like.
The omelette is a simple recipe, but it has its characteristic steps. We will cut the Potato in small pieces and we will fry them in a frying pan with plenty of oil.
Once the potato is done, we will set it with egg. We will make a layer of tuna with tomato and we will cover it with a thin French omelette. Delicious!

Ingredients
- 1 kg de patatas
- 1 / 2 cebolla
- 8 eggs size L
- Plenty of sunflower or olive oil
- 2 cans of pickled tuna
- 4 tablespoons of tomato sauce
Preparation
Peel and wash the potatoes. Cut them into small pieces. Peel and cut the onion into small pieces.
We prepare a frying pan with plenty of olive or sunflower oil (to the consumer's taste) and add the potato and the onion. We add salt and put it to heat on high heat.
When it starts to fry, we lower the heat a little and cover it. Turn the potato every 5 minutes, until it softens.
Place six eggs in a bowl, add a pinch of salt and beat them.
We drain the oil from the potato when it is done. We add it to the egg and mix the mixture well.
We prepare a frying pan where we are going to cook the omelette. We pour a couple of tablespoons of oil that we have drained and put it on the fire. When it gets hot we add the potato and egg mixture. We wait a few seconds and stir the mixture from the outside to the center a couple of times.
We leave set for a couple of minutes and Using a large plate, we flip it over. We immediately pour the other layer over the pan to set. We wait 3 minutes and we remove it.
Beat two eggs with a pinch of salt. In the same pan add a tablespoon of oil and heat it. When it gets hot add the beaten eggs and We stir slowly so that it sets.
With the help of a plate we turn the omelette over and put it back into the pan to to set on the other side. In this way we make a thin French omelette to cover the filling.
We prepare the filling: we drain the two cans of Marinated tuna and we mix with the fried tomato.
Spread the filling over the tortilla and cover with the omelette. Serve hot.
