Do you have leftover spinach and don't know what to do with it? Well, we are going to prepare a delicious Spinach Pie.
We will use breeze pasta, which is in the refrigerated area. And, next to the spinach, we will put a few tablespoons of Parmesan cheese.
Spinach must be sautéed beforehand, for example, following this recipe from spinach with raisins and cashews. That's why I tell you that it is a great harvest recipe.

Ingredients
- 1 sheet of shortcrust pastry
- sautéed spinach
- Grated Parmesan (about four tablespoons)
- Milk or beaten egg to paint the surface

We extend the shortcrust pastry, leaving the baking paper at the base.
In one of the halves, we put a couple of tablespoons of grated Parmesan. We do not put it on the edge because later we will use that space to seal the empanada.
On the Parmesan we extend the sautéed spinach.
We put the cheese on the spinach.
We close our empanada by putting the empty dough part on top of the filling.
Seal the edge with your finger (as seen in the photo) or with a fork.
It will stay like this.
Paint with beaten egg or milk. Bake at 200º for approximately 20 minutes or until we see that it is golden.
