Envelope-shaped dumplings

We are going to prepare some tuna patties fun for their shape and delicious for the dough and filling.

The mass is practically like bread doughIt is made with water, flour, fresh yeast and a little oil. The filling is very simple because it is raw. To prepare it you only have to mix the ingredients.

If you don't feel like giving it that envelope shape You can make them in the traditional way, forming discs with the dough and making half moons.

Ingredients

For the mass:

  • 400 g flour
  • 220 g warm water
  • 15 g fresh baker's yeast
  • 20 g olive oil
  • 1 teaspoon of salt

For the filling:

  • 1 ripe tomato
  • 2 hard-boiled eggs
  • 1 can of canned tuna
  • 5 or 6 green olives
  • 2 tablespoons of corn
  • A little bit of salt
  • A splash of olive oil

Plus:

  • A little oil to paint the surface of the empanadas

  1. Put the flour and water in a large bowl. Crumble the yeast and add it as well. Flour, water and yeast

  2. We begin to mix with a wooden spoon. We add the oil and salt. We add oil and salt

  3. We knead and let it rest

  4. We take advantage of this time to prepare what will be the filling. In a bowl or deep plate, we put the tomato in pieces and without the skin. We add two hard-boiled eggs in pieces, the drained tuna, the pitted olives and the corn also without liquid. We add a splash of olive oil and a little salt. We mix and set aside. We make the filling

  5. When the hour necessary for rising has passed, we stretch the dough on a floured surface. We form it into a rectangle. We divide it into 8 portions. We put one or two tablespoons of filling in one part of each rectangle.  We cut and fill

  6. We close them and seal the edges.

    We make the cut to make it look like an envelope and we put a small piece of dough to simulate the closures of each envelope. We form the empanadas

  7. We paint the surface with a splash of olive oil.

  8. Bake at 200º for 10 or 15 minutes, until golden brown.
