This can be a great way to use up leftover cooked pasta. And if you don't have any leftover pasta, you can cook it in no time . We'll also make a delicious tomato, eggplant, and basil sauce , bursting with flavor. The step-by-step photos will show you how easy it is to make.
The unique aspect of the dish is that we will serve the pasta inside the eggplant itself , on the outside.

Ingredients
- 2 eggplants
- Sal Island
- Extra virgin olive oil
- 400 g tomato pulp
- 5 basil leaves and another 4 to decorate
- About 200 g of pasta already cooked (or about 60 g of dry pasta that we will have to cook)

We cut the aubergines in half and make some cuts in their pulp, as seen in the photo. We put a drizzle of olive oil on each half of eggplant.
We roast the aubergines at 180 °. About 30 to 40 minutes will be enough to soften the pulp.
Remove the pulp from the outside of the eggplant with a spoon. We reserve the external part because later we will use it as a "plate".
We chop that we have taken out, with a board and knife, and we put it in a pan.
Add a drizzle of extra virgin olive oil, the tomato, a little salt and about 5 basil leaves.
Cook over low-medium heat. Our tomato sauce will be ready after about 20 minutes (the aubergine has to be soft).
We cook the pasta in a saucepan if we do not have it cooked in advance. For this we will put plenty of water in the saucepan. When it starts to boil, add a little salt and cook the pasta for the time indicated on the package.
When the pasta is done and so is our tomato and eggplant sauce, lightly drain the pasta and put it in the pan.
We mix everything.
We put pasta with tomato on each of the emptied aubergines and we place them on a tray suitable for the oven. We sprinkle grated cheese on the surface.
Bake a few minutes, until the cheese is golden.
We serve hot, with a basil leaf on each of the portions.
