Have you ever tried pasta mixed with avocado sauce? If you have not done it yet, I highly recommend it, because it is a delicious pasta that you will only need 20 minutes to prepare.

Ingredients

  • For two people
  • 500 gr of spaghetti
  • 2 ripe avocados
  • Some fresh basil leaves
  • 2 cloves of garlic
  • 2 tablespoons freshly squeezed lemon juice
  • Maldon salt
  • Ground black pepper
  • Olive oil
  • 20 cherry tomatoes, halved

Preparation

  1. In a large saucepan, bring water to a boil with salt. When the water starts to boil, add the pasta and cook according to the pasta instructions.

  2. For the avocado sauce, in the glass of a blender we mix the avocado with the basil, garlic, and lemon juice. Season with salt, pepper and olive oil, and emulsify everything until all the ingredients are well mixed.

  3. Once the pasta is cooked, we drain it and mix it with the avocado sauce. Garnish with cherry tomatoes, and serve immediately.
