With this dessert you are going to surprise everyone. It is a giant cookie with jam, cream and red berries on it.
The cookie must be made in advance so that it is cold when we go to assemble the cake. And there are no more secrets ... Well yes, just one more: use a quality jam, even better if it is homemade. I leave you the link to a plum jam made in the microwave.
Biscuit cake with cream and red berries

Ingredients
For the cookie:
- 250 g flour
- 100 g of sugar
- 100 butter g
- 7 g baking yeast
- 2 eggs
For the cream:
- 250 g whipping cream
- 40 g icing sugar
Plus:
- 4 tablespoons of jam
- 200 g of red fruits
- Some mint leaves
Music
In a large bowl we put the flour, the yeast, the sugar and the cold butter in pieces.
We mix everything with our hands, undoing the butter.
We add the two eggs.
We mix everything until it is well integrated.
We wrap the dough in plastic wrap.
We reserve in the fridge for at least 30 minutes.
We take the dough out of the fridge. We put it between two sheets of greaseproof paper and stretch it with a roller.
We have to obtain a circle of about 22 centimeters in diameter. It will be a great cookie.
We reserve it in the freezer for about an hour.
We take advantage of that time to whip the cream. For this we put the very cold cream in a bowl.
We assemble it with the rods or with the kitchen robot until we obtain a very firm cream. Add the icing sugar and mix gently.
We preheat the oven to 180. We remove the greaseproof paper from the surface of the dough and bake the cookie (with the greaseproof paper underneath). It will be ready in about 20 to 25 minutes. Let it cold down.
Once cold we assemble what will be our cake. We put the jam on the baked cookie.
On the jam we distribute the cream.
On top of the cream we place the red fruits, in my case, frozen.
If we want, we decorate with some fresh mint leaves.
