These blueberry muffins They have everything. They are original, have a great texture and an irresistible flavor.
El filling We will make it with fresh blueberries, which we will mix with sugar and a little flour. And the dough is not complicated to make, especially if we have a mixer.
The surface is painted with beaten egg, which will give them that beautiful shine. And also, once baked, when they are cold, we will put powdered sugar on the surface to make them more attractive.

Ingredients
For the mass:
- 80 g of sugar
- 20 g fresh baker's yeast
- 2 eggs
- 100g milk
- 370 g flour
- 50 g butter at room temperature
- A pinch of salt
For the filling:
- 200g fresh blueberries
- 2 tablespoons sugar
- 1/2 tablespoon of flour
Plus:
- An egg to paint the surface
- Icing sugar (optional)
Preparation
We put the sugar, yeast, eggs and milk in the bowl of the mixer.
We mix.
Add the flour, yeast and salt.
We knead.
We let the dough rise for about two hours. Once that time has passed, the dough will look like this.
We take the dough out of the bowl. We knead it briefly with our hands and divide it into 16 portions.
In a bowl we put the blueberries, two tablespoons of sugar and half a tablespoon of flour.
We mix.
We return to our dough. We take the portions and form them into a ball. We crush them with our hands to form a disk and put a tablespoon of blueberries in the center of each disk. We close the buns as seen in the photo and put the union part at the bottom (the union will be the base).
We put our stuffed buns on two baking trays covered with baking paper.
We let it rise for about an hour.
We paint the surface of each bun with egg white.
Bake at 160º for approximately 25 minutes.
Once out of the oven, when they are cold, sprinkle icing sugar on the surface.
