You can make a large quantity and freeze the leftovers , because it keeps well for a long time thanks to the sugar which acts as a perfect preservative.

    Ingredients

    • 1 kilo of onions
    • 2 tablespoons of brown sugar
    • 7 tablespoons olive oil
    • a tablespoon of vinegar.

    1. To prepare it, peel and cut the onion into very thin strips.

    2. Sauté the onion in a frying pan with a good stream of olive oil over medium heat, stirring constantly so that it does not burn. If you see that more oil is needed, add a little more, little by little.

    3. When we see that the onion is tender, add the sugar and vinegar, and stir until caramelized. (about 20 minutes) over low heat.

    4. Then drain the oil with the help of a strainer.
