Custard is a traditional dessert that rarely fails at the table. In order to give them a more refreshing and summery tone, we will prepare them with apple and take them very cold, accompanied by a few caramelized apple.

Yolks 4
12 gr. by Maizena
50 gr. brown sugar
160 ml. apple juice
2 tablespoons lemon juice
a teaspoon of vanilla flavoring or 1 pod
1 teaspoon of cinnamon powder
2 apples
1 spoonful of butter
2 tablespoons of white sugar

Music

Heat the apple juice together with the vanilla (if it is in a pod, open it in half lengthwise), the lemon juice and the cinnamon. As soon as it starts to boil, remove from heat and leave to infuse for 15 minutes.
Meanwhile we prepare the caramelized apples: Peel them and cut them into small cubes, put them in a pan with the butter and the two tablespoons of sugar. Cook over medium heat until tender and golden.
Beat the egg yolks with the sugar with the help of a stick mixer until creamy. Then we add the cornflour and dissolve it well.
We reheat the apple preparation, already strained, and pour it over the eggs.
We put this mixture over low heat and wait for it to thicken, without letting it boil hard so that the egg does not curdle.
Let the custard cool and serve it with the caramelized apple.
