There is nothing more fun to do cookies with the children. So for these festive days I suggest you prepare these Easter eggs with lemon curd.
They are very simple to do and we only have to take care of to bake the cookies. The rest can be done by them without any problem.
The most comfortable thing is to buy the puff pastry already made. Also nowadays it is easy to find it gluten-free, which allows any celiac to enjoy our Easter eggs.
To fill it I have opted for the lemon curd and its velvety texture and citrus flavor combines great with puff pastry.
You have to be careful to fill them just when serving because, otherwise, the humidity of the lemon curd will soften the puff pastry and it will lose its crunchy texture.

Ingredients
- 1 sheet of gluten-free puff pastry
- 2 tablespoons (soup size) icing sugar or powdered sugar
- lemon curd (see recipe here)

We preheat the oven to 200º with heat up and down.
With the help of a rolling pin, slightly stretch the puff pastry sheet. With an egg-shaped cookie cutter, we cut the puff pastry. We must be careful to always cut an amount that is even because each cookie will have 2 pieces.
In the middle of our cookies we will cut a hole in the center using a small round cookie cutter. We discard the cut pieces.
To the rest of the cookies that are whole, we will prick them well with a fork so that they do not swell when baked, we will paint them with water using a brush and we will put the cut cookies on top.
We will gently squeeze the edges with the help of fingers, thus preventing the two cookies from separating. We will place them on a tray and bake for 10 or 15 minutes, until they have a nice golden color.
Remove and let cool on rack.
When they are cold, we will sprinkle, with the help of a fine mesh strainer, the icing sugar over the puff pastry cookies.
With a small spoon we will fill the holes with the lemon curd.
