Easter eggs with lemon curd

There is nothing more fun to do cookies with the children. So for these festive days I suggest you prepare these Easter eggs with lemon curd.

They are very simple to do and we only have to take care of to bake the cookies. The rest can be done by them without any problem.

The most comfortable thing is to buy the puff pastry already made. Also nowadays it is easy to find it gluten-free, which allows any celiac to enjoy our Easter eggs.

To fill it I have opted for the lemon curd and its velvety texture and citrus flavor combines great with puff pastry.

You have to be careful to fill them just when serving because, otherwise, the humidity of the lemon curd will soften the puff pastry and it will lose its crunchy texture.
