16 mussels boiled without the shells
1 glass of tomato sauce
1 garlic clove
flour
2 eggs
bread crumbs
water
extra virgin oil
shawl
parsley

Put the potatoes to cook in a pot with water.
Peel them, pass them through the mill and season them.
Chop the garlic clove and a little parsley; place in the mortar and pestle well until a homogeneous mixture remains.
Add it to the puree and mix well.
Take a portion (the size of a biscuit) of mashed potatoes, place a mussel in the center and cover with the mashed potatoes that remain on the edges.
Coat the croquettes in flour, beaten egg and breadcrumbs and fry them over medium heat in a pan with plenty of oil.
Serve them in a large dish, accompany them with the hot tomato sauce.
Sprinkle with some chopped parsley.
