Ingredients

1 medium octopus
raw and frozen
shawl
flour for frying
olive oil
lemon

Once the octopus has thawed, cut the legs into half-centimetre pieces.
We salt it and pass it through flour.
Pass it through a strainer or sieve to remove excess flour.
Then we heat a large frying pan with plenty of olive oil to about 200 degrees. The oil should be very hot, but should not smoke.
Fry the floured octopus in the oil in small quantities, until it is golden brown and crispy. It is important not to fry at too high a temperature, since it would burn on the outside and the inside would be raw, nor over-fry, since it would be very dry. The right point is given by experience.
Once the fried octopus is ready, we drain it a little and serve it immediately with a little lemon.
