Ingredients
- 4 quail eggs
- 5 medium potatoes
- 1 medium red bell pepper
- 1 medium green bell pepper
- 2 small onions
- 60-80 g of Iberian serrano ham
- Parsley chopped or sprigs
- 4 tablespoons of tomato sauce or similar
- Plentiful oil for frying
- Sal Island
- Black pepper
Preparation
We peel the potatoes and we wash them. Will thin slices and heat a large skillet to fry them. When the oil is hot, add the potatoes and let them brown. Once they are done, we take them out, drain, season with salt and pepper and set aside.
We cut onion and peppers in thin strips. In a large frying pan, pour a splash of oil and fry all the vegetables. Add a pinch of salt and let them brown.
Prepare a tray that can go in the oven and place the four pastry rings. At the base we place a layer of potato and vegetables on top.
We cut the Serrano ham in pieces and we put it by on top of the vegetables. We open an egg and place it raw in the center of the timbale.
We put it in the oven 200° about 10 minutes. When it is ready, we unmold the structure and we will be able to decorate with the chopped parsley and the sprigs of parsley. On one side of the plate we will put a spoonful of tomato sauce.
