This dish is a delight! I loved trying this fabulous spoon stew and it's something we have to try. The recipe is simple and can be suitable for beginners.
We will cook the ingredients step by step, as we will a simple stir fry which will be the one that offers the main flavor to this recipe. Then we will add a vegetable broth and lentils, to finish making this great dish.

Lentils with artichokes and ham cubes

Ingredients
- 360 g of brown lentils
- 2 medium carrots
- 3 cloves of garlic
- 1 small onion
- 8 medium canned artichoke hearts
- 100 g of serrano ham in thick slice
- 4 tablespoons of homemade tomato sauce
- 2 medium potatoes
- 2 Bay leaves

- 40 g olive oil
- 1 liter of vegetable stock

We clean the 2 medium carrots and we cut them into small cubes. We prepare the artichokes, we take them out of the can and let them drain well. Then we cut them in half.
We clean the onion and the 3 cloves of garlic. Cut the onion into fine julienne strips and finely chop the garlic. We prepare a casserole with 40 g olive oil and we heat it up. We add the onion, garlic and carrot and fry it.
When the onion becomes transparent, add the 4 tablespoons of tomato sauce and we cook it for 4 minutes. Stir occasionally.
We peel the 2 medium potatoes and we cut them into small pieces, we can click them a little when cutting them (this way the stew thickens better). We prepare the slice of Serrano ham and we cut it into small cubes. We add it to the sauce and let it fry couple of minutes.
We add the 360 g of lentils, the liter of water, the two bay leaves and adjust the salt. We let it cook over high heat. When it starts to boil, lower it to medium-low heat. We cover with a lid and wait 45 minutes.
In the final cooking we add the artichokes to the stew. If you need to add a little water, we add it. We cover and let the last ones cook. 15 minutes.
