To cook these macaroni with meat and aubergine we will cook the pasta in a saucepan, we will sauté the vegetables in a pan and we will prepare the minced meat in another. And everything, to have it ready in less than 20 minutes, in the time it takes to cook the macaroni.

Ingredients
- 1 eggplant
- Sal Island
- 40 g onion
- A splash of olive oil
- 400 g of minced meat
- 320 g macaroni
- 350 g of passata or crushed tomato
- dried aromatic herbs
- Pepper
- A few flakes of Parmesan or another cheese that we like

Wash and chop the aubergine.
We put salt
Chop the onion and put it in the pan, with a drizzle of olive oil.
We poached it
Add the minced meat, salt, pepper and aromatic herbs.
We redo everything well.
We incorporate the tomato.
We mix.
While we prepare the meat we can cook the eggplant. We will only have to put it in another pan with a drizzle of olive oil and some aromatic herbs. Mix while cooking over medium-low heat.
While the aubergine and meat are cooking, we will also cook the pasta, in a saucepan with water and a little salt.
Finally, we will only be left to mix the pasta with the meat, in the pan where we have cooked the minced meat.
We will serve our pasta with minced meat with a few pieces of aubergine and a few slices of Parmesan cheese.
