1 kilo of carrots
1 kilo of white sugar
4 lemons
1 liter of water approximately

Preparation

We wash the carrots, peel and chop them; Cook them in a pot in boiling water (enough to cover them) until they are soft, about 25 or 30 minutes.
Once cooked, we drain them and mash them to make a puree. We peel three lemons and cut the skin into thin 1 cm long strips. We squeeze the slimes and separate the juice of 3 lemons on one side and 1 on the other.
Apart we make a syrup with 400 ml of water with all the sugar and the juice of the three lemons with the skins. Then we add the carrot puree and the juice of the fourth lemon and continue cooking for 5 to 10 minutes. Until the spoon is napada (that does not come off easily) by the jam.
Likewise, we can check if the jam is ready by pouring a little on a granite or marble surface (a plate is worth it too); We spread the jam and when it cools it should thicken, a sign that it is ready. It must be taken into account that when it cools it will thicken.
