Ingredients
- 100 g smoked bacon
- 1 medium onion
- 250 g of cream cheese type Philadelphia
- 50 ml of heavy cream
- Sal Island
- A little bit of chives for garnish
- Two spoons of olive oil

We put a frying pan on the heat and put on fry the baconUsing its own fat, we can fry it on both sides until crispy. We remove the bacon, cut it into small pieces with a knife, and set aside a spoonful of bacon to garnish the recipe.
In the same pan two tablespoons of olive oil. We clean the onions, the we cut into julienne and we add it to the pan to fry them over low heat. We brown the onion and we caramelize it. Caramelizing means cooking it in its own sugars; there's no need to add sugar.
In a tall glass, we will blend all the ingredients. We add 250g cream cheese, 50ml cream, the bacon (minus the reserved tablespoon), a little salt and the caramelized onion. We beat it well with a hand mixer, until we get a smooth cream without lumps.
We placed the cream in a small, deep dish. We garnished it with the leftover bacon and some chopped chives.
