Make some orange muffins irresistible is very simple if we have the help of a kitchen robot like Thermomix. With it we managed to crush half an orange and mix ingredients in a very simple way.
Ideally, have a rigid muffin pan in which to put the papers inside. I don't have one so I used those molds puddings that you see in the photo. In the event that your mold is small, or if you have few molds, you will have to do several batches of baking.
And if you don't want to complicate your life, instead of making muffins you can always make a cupcake flavored sponge cake. Put the dough in a sponge cake mold and bake it for 30-40 minutes.

Ingredients
- 1/2 orange juice with skin
- 4 eggs
- 150 g of sugar and a little more for the surface
- 180 g olive oil
- 200 g flour
- A pinch of salt
- An envelope of Royal type pastry yeast

We put the half orange in the glass, with skin and everything. We can cut it in two, if we want. We also put the eggs and sugar in the glass.
We crush and mix everything programming [b] 3 minutes, 37º, speed 5.
When the time is up we program 3 minutes, speed 5. This time, no temperature. It will stay like this.
Add the olive oil. We mix by programming 15 seconds, speed 5.
Add the flour, yeast and salt.
We program 8 seconds, speed 6.
We put the papers in the rigid cupcake molds. If we do not have, we can use some bowls suitable for oven, as I have done.
We put dough in those molds, without filling them completely.
Sprinkle a little moistened sugar on each cupcake.
Bake at 220º for approximately 15 minutes.
Notes
If we have few rigid molds we will have to do several batches of baking.
