Ingredients

600 gr. of potatoes
4 eggs
150 gr. chopped Iberian ham
olive oil
shawl

Cut the potatoes into thin slices, wash them well to remove the starch, drain them and salt them.
In a large saucepan or frying pan, add a good amount of olive oil and, when hot, add the potatoes. Sauté them until tender and golden.
Separately we fry the eggs in the same oil. Chop Iberian ham.
We mount the potatoes on the plate, on them we put the fried eggs, we break them with a knife and a fork to disperse them over the potatoes and sprinkle with the ham.
