We have these traditional village cookies called perrunillas. They are very traditional and their flavor will captivate you. They have a blend of flavors like cinnamon and anise that make them very aromatic.

These cookies are made with a food processor, but they can easily be kneaded by hand. Don't add the whole eggs, as the egg whites will be used to coat the cookies along with the sugar, creating that wonderfully crisp texture.

Ingredients

500 g of wheat flour
150 g of sugar
2 eggs
250 g of lard at room temperature
Zest of a lemon
1 tablespoon of anise liqueur
1 tablespoon of milk
1 teaspoon of cinnamon powder
1 teaspoon of baking powder
1 bowl full of sugar

If using a food processor, add 250g of lard, 2 egg yolks, and 150g of sugar . Mix for 2 minutes.
Add the tablespoon of anise, the tablespoon of milk, the lemon zest, and the teaspoon of ground cinnamon . Mix again for 2 minutes.
Add 250g of wheat flour and the tablespoon of baking powder. Mix for several minutes. Then add the remaining 250g of flour and mix again for another two minutes until a dough forms.
When we have the dough ready, we form the cookies as if they were croquettes. We flatten them a little and place them on a surface.
Whisk the egg whites until frothy. Prepare a bowl of sugar. Take the cookies and coat them in the egg white and sugar mixture . Place them on a baking tray. It's important that they are slightly separated, as they will expand during baking.
Preheat the oven to 200°C (390°F) with the top and bottom elements on. Once it's hot, place the cookies in the center. Bake them for 15 minutes. After baking, let them cool on the baking sheet, as they will still be soft. Finally, you can serve them. Enjoy!
