4 eggs
3/4 cup of sugar
1 tablespoon oil
2 tablespoons buttermilk or buttermilk*
1 teaspoon apple cider vinegar
1 teaspoon vanilla extract
1 drop or small touch of red or pink food coloring
1 cup of flour
1 teaspoon yeast
1 / 2 teaspoon salt

We preheat the oven to 175 degrees and begin to prepare the cake dough. In a large bowl, beat the eggs with a hand mixer for 5 minutes until they are lightly assembled and pale in appearance. Continuing to beat, gradually add the sugar and oil. Next, we add the buttermilk*, the vinegar, the vanilla extract and a few drops of coloring until the desired color is obtained.
Sift the flour into another container along with the yeast and salt. Add this mixture little by little to the previous preparation and mix well until obtaining a homogeneous mass.
We prepare a rectangular and not very tall mold so that we obtain a rectangular cake sheet that is not too thick so that we can roll it up later. Cover the mold with non-stick paper, pressing well on the walls and bottom, and pour the dough, distributing it evenly. Bake the cake for about 12 or 15 minutes or until we press with our fingers and the dough comes to itself.
We take a cotton kitchen towel, spread it out on a counter and sprinkle it with icing sugar. So, when the cake is ready, we carefully remove it from the mold together with the paper and immediately arrange it on the cloth. We will be rolling the cake on itself so that it is very tight and we will get rid of the paper and the cloth. Then, we put the cake roll on a rack with the closing end down and let it cool completely.
We carefully unwrap the cake on a sheet of film, a cloth or baking paper and spread it with our favorite cream. We roll it up again and cut it into slices that we will decorate to taste with more cream, cherries, fruit, ice cream or syrups.
Add a teaspoon of vinegar or lemon juice to 250 ml. of milk and let it rest for 5 minutes.
We should not worry about the appearance of the milk, it only changes its state, it does not go bad.
