Close cousins of pestiños , these sweets are typical of my hometown, Chiclana, and are enjoyed during Christmas, hence the name Christmas Eve cakes. The difference lies in the wine, which is sweet, preferably Muscatel from Chiclana, and in the citrus, which is grated orange zest.

Ingredients

1 glass of oil water
1 glass of water, muscat wine (from Chiclana, if possible)
2 tablespoons of anise beans
The peel of a grated orange
700 grams of flour
a pinch of salt
300 ml honey
2-3 tablespoons of water

We heat the oil in a pan with the orange peel and the anise; Be careful not to burn them, otherwise the oil would acquire an unpleasant bitter taste. We separate, strain and let it temper.
We put the glass of wine in the microwave for half a minute to evaporate the alcohol and pour it over flour with a pinch of salt in a large salad bowl type container. Stir well and add the strained oil.
Add a little more fresh anise seeds and a little grated orange peel (only the colored part). We love well, until the dough detaches from the pot and is manageable; Add a little more flour if necessary. Spread the resulting dough on a clean and lightly floured work surface with the help of a rolling pin or glass bottle.
With that dough we make balls the size of a meatball. With the help of a roller we spread the balls on the surface until they have a more or less oval shape. We cut rhombuses or rectangles. The dough should be very thin.
We fry the cakes in a pan with very hot oil. When they are golden brown, we leave them on absorbent paper. On the other hand, we put the honey in a saucepan with 2 or 3 tablespoons of water and a good stream of orange juice.
Put over moderate heat, stirring, and when it starts to boil, set aside. We place the cakes in a dish with raised edges and water with the honey (well distributed); if we want, we sprinkle with colored balls.
