This polvorones sponge cake may be a perfect recipe for benefit the polvorones that we have left over from these past Christmases. But if you like it a lot you can also do it throughout the year, you just have to provide yourself with a good amount of polvorones in Christmas and reserve them for the following months.

You can prepare it with any type of polvorón, the classics, lemon, coconut, chocolate, mixed ... the ones you like the most.

You will see that the recipe does not include flour and that is because the ingredients of the polvorones themselves replace the flour.

Ingredients

300 gr. of polvorones
3 eggs
150 gr. sugar
1 vanilla custard
50 gr. Of olive oil
1 sachet of backing powder
Sal Island
Powdered sugar for dusting

Music

Crumble the polvorones with your hands, you can leave them completely undone or with a larger piece that you later find inside the cake. Reserve.
In a bowl, beat the eggs and sugar with a few rods until they foam and white.
Add the custard and continue mixing.
Then add the oil and continue beating.
Finally add a pinch of salt and the polvorones that we had reserved along with the yeast. Mix with the help of a spatula.
Pour the mixture into a pan lined with greaseproof paper or greased and floured.
Place in the oven preheated to 180ºC and bake for 25-35 minutes, it will depend on the oven, so it is advisable that after the first 25 minutes you puncture the cake to check if it is already done.
Remove from the oven, let it warm, unmold and finally sprinkle the surface with icing sugar.
