This meat is spectacular for making on barbecues, but in our recipe it is we have marked in the pan, frying it on all sides.

Pork lizard with mushroom sauce

Ingredients
- 4 pieces of Lizard
- 1 / 2 cebolla
- 1 tablespoon of wheat flour
- 1 can of whole mushrooms
- 1 beef stock cube
- Water glass 1
- 1/4 glass of brandy
- Chopped fresh parsley
- 40 g olive oil
- Sal Island
- Ground black pepper
Preparation
In a pan add the 40 g olive oil and heat it up. When it's hot, add the seasoned pieces of "Lagarto" meat. Let them fry until golden brown.
We remove the meat from the pan and set aside. We cut the onion very finely and add it to the pan with the oil we used. Let it brown.
We add the tablespoon of wheat flour, stir and cook for 1 minute. Add the mushrooms and we cook it for several minutes.
We add the 1/4 glass of brandy and the glass of water. Let it heat up a little and stir well to thicken the sauce and break up any lumps.
We incorporate the finely chopped meat stock cube and we let the whole sauce cook so that the ingredients are combined.
Once the sauce is ready, we plate it. To do this, place two pieces of meat on each plate, drizzle with the sauce, and add a little chopped parsley.
