Puff pastry with delicious escalivada

Do you fancy a first class snack? That is what we have prepared with this premade puff pastry. Given its ease and very affordable in today's kitchen, we can prepare countless cold, hot, sweet or savory dishes.

This puff pastry has a stuffed with eggplant, tomatoes, red pepper and a selection of salted anchovies that will give that strong point to this dish.

Some ingredients must be bake them to be able to cook them, then all that remains is the touch of these vegetables on top with the anchovies and a thin thread of olive oil. Exceptional!

Ingredients

  • 1 premade puff pastry sheet
  • 150 g of tomato paste
  • 50 g large, premium salted anchovies
  • 1 red pepper
  • 8 cherry tomatoes
  • 50 g of green olives stuffed with anchovies
  • 1 eggplant
  • Olive oil
  • Sal Island

Preparation

  1. On a tray that can go in the oven, place the eggplant cut in half and the open and split red pepper in several large pieces. We add salt and a splash of olive oil.

  2. We put it in the oven 220° with heat up and down. We let it bake around 25 minutes.

  3. We prepare a tray that can go in the oven with baking paper. We extend the puff pastry sheet on the baking paper and cut the sheet in half. We spread it with the crushed tomato.

  4. If we have the eggplant and red pepper baked, we proceed to cut them into strips. We remove the skin from the eggplant and we cut it into laminated pieces. We extend the pepper and we cut it into medium thick strips. We place it on the puff pastry.

  5. Add the anchovies and cherry tomatoes cut in half. We will also decorate with green olives.

  6. We prepare the oven at 200° with heat up and down. When it heats up, we put it in the center part of the oven. We let it cook between 12 to 15 minutes.

  7. When we have it ready, we add a splash of olive oil and serve. It can be taken hot or cold.
