Today we have quesadillas for dinner! To prepare them we are going to use bacon, chicken, avocado and cheddar cheese nothing else, and so that they are not so greasy, we are going to toast the bacon in the oven so that it is more crunchy and without any oil. Enjoy all of our Mexican recipes.
Chicken Quesadillas with Cheese and Avocado
Today we had Chicken Quesadillas with Cheese and Avocado for dinner! To prepare them we are going to use bacon, chicken, avocado and cheddar cheese nothing else.

Ingredients
- 4 tortillas
- 250 gr of chicken cut into small pieces
- Sal Island
- Pepper
- 100 gr of chopped chives
- 8 slices of bacon
- 1 Avocado
- Shredded cheddar cheese
- Olive oil

Place the bacon in a baking tray, on a grate and let it bake for about 8 minutes on each side, until we notice that it is crispy. Once we have it well baked, we split it into small strips and leave it reserved.
Add a few drops of olive oil in a frying pan and fry the well-cut chives. Sauté a little until they are poached. Add the broken chicken pieces and season with salt and pepper. Let the chicken brown for about 5 minutes.
Prepare the corn tortillas, and find a pan that has the same diameter as the tortillas. Put a few drops of olive oil in the pan and when it's hot, put the pancake. On top of it, place the chicken, bacon and avocado in cubes. Finally add some grated cheese. Let the pancake cook on one side, and then with the help of some kitchen tongs, fold the pancake in half like a quesadilla and turn it very carefully so that it browns on the other side as well, and the corn tortilla is well golden and crunchy.
Once you have them done, you just have to cut them in half and enjoy them.
