Ingredients

2 large zucchini
3 very ripe tomatoes
1 cebolla
2 potatoes
Extra virgin olive oil
6 fresh eggs

We prepare the ingredients for the ratatouille.
Chop the onion and poach it in a pan, over low heat and with olive oil.
While the onion is cooking, peel and chop the zucchini. We put it in a saucepan over the fire, with a little salt, so that it releases the water.
After a few minutes the zucchini will have released its water.
Then we add the potatoes, also chopped.
Let cook for a few minutes, until the potatoes are well cooked.
When the onion is well cooked we remove it from the pan, leaving the oil. We put the peeled and chopped tomato in that pan and in that oil. We put it on the fire to cook and reduce.
Once we have all the ingredients cooked, we put them together in the wide saucepan, where we have the zucchini and the potato. We mix everything well, adjust the salt and cook everything together.
When we have the ratatouille done, fry the eggs in plenty of oil.
We serve the ratatouille with a fried egg on each plate.
