This recipe is a different way to eat baked chicken. This is a simple recipe with a fusion of ingredients that you will enjoy.
The first is Marinate the chicken fillets for an hour, this part is essential for the meat to obtain a special flavor. Afterwards we will bake it on an onion and potato base.
When we have it baked we will cover it with a paste of grated cheese and tomato. It will be great, with a delicious flavor and a crispy crust.

Ingredients
- 1 chicken breast filleted
- 1 tablespoon of oregano
- 3 cloves of garlic
- 2 tablespoons of sweet paprika
- 8 tablespoons olive oil
- 1 tomato large
- 1 cebolla
- 4 medium potatoes
- 150 g grated mozzarella cheese
- 2 tablespoons mayonnaise

In a bowl we place the chicken breast fillets. Add the 3 cloves of chopped garlic, 2 tablespoons of olive oil, 1 tablespoon of oregano, salt and the 2 tablespoons of sweet paprika. Stir everything well and leave them rest for 1 hour so that all the ingredients are well integrated.
We prepare a tray that can go in the oven. We peel the onion and cut it into thin slices. Place them on the bottom of the tray. Add salt and ground black pepper, and drizzle with the rest of the olive oil.
We place the chicken fillets on top, cover the tray with aluminum foil and put it in the oven. We heat it to 220º, with heat above and below, for 30 minutes.
Before baking we will prepare the following ingredients. Chop the small diced tomatoes.
In a bowl add the diced tomato, 150 g of mozzarella cheese and two tablespoons of mayonnaise. We mix the ingredients well.
We check if the roast potatoes are almost soft. If they are not, we bake them for another 10 minutes. Once ready, we add the mixture from the bowl. We cover it well and put it back in the oven. We lower the temperature to 200º and bake for another 20 minutes.
Once baked, serve hot.
