Ingredients

2 eggs L
a pinch of salt
a tablespoon of honey
the zest of half an orange
20 gr. Fresh Yeast
45 ml of water
10 ml. orange blossom water
100 gr. of butter
275 gr. strength flour
15 gr. powdered milk
50 gr. sugar
candied fruits and sugar for garnish

We begin by mixing the salt, eggs, honey, zest, water, orange blossom water and melted butter in a large bowl. Beat with the rods until all the ingredients are well integrated. Add the crumbled yeast and beat again until well dissolved.
On the other hand, we mix the flour, milk powder and sugar in another large container. Pour the previous preparation over this mixture and stir with a wooden spoon to bind the ingredients. We knead with our hands for three or five minutes until we have a manageable dough. In this kneading process we can sprinkle a little more flour if necessary so that the dough takes consistency.
We make a hole in the center of the dough with our fist and give it the shape of the donut. We must take into account that this hole must be quite large, since later the mass increases its size with the rising and could close it.
We put the rosco on a baking tray covered with baking paper, and we cover it with a kitchen towel. We introduce the tray in the oven turned off for about five hours or until the dough doubles its volume.
Then, we paint the roscón with beaten egg and decorate it with candied fruits and sugar moistened with a little water.
Bake the roscón at 200 degrees for 20 minutes. If we see that it browns excessively, it is better that the last 5 minutes of baking we cover the roscón with aluminum foil.
Let the roscón cool on a rack before cutting it in half and filling it and introducing the surprises.
