Strawberry Stuffed Cookies, Valentine's Snack

1. We prepare the cookies following the recipe for sablé dough, for example (click on the list of ingredients). This dough allows us to make thin and crunchy cookies, ideal for filling with creams.

2. Once we have the cold cookies, we reserve them and proceed to prepare the strawberry frosting. To do this, we begin to beat the butter at room temperature with the rods at medium speed. After a few minutes, the butter will have increased in volume and will be whitish. Then we add the cheese. We beat again for a while.

3. Reduce the strawberries to a puree and add it to the butter and cheese cream together with the icing sugar. Always without stopping beating.

4. We continue beating the frosting for a few minutes until it is homogeneous and consistent. We put it in a pastry bag and let it rest in the fridge for a minimum of 90 minutes.

5. After the time, we fill the cookies as a sandwich.

6. Melt the chocolate in the microwave or in a bain-marie, leave it on a template and dip half of each filled cookie in it.

7. Drain the excess chocolate and place them on a silpat or non-stick paper to wait for the chocolate to harden.
