Ingredients
- 8 plates of lasagna
- 2 large balls of mozzarella
- 150 gr of ricotta cheese
- 150 gr of grated cheese
- Black pepper
- 4 medium tomatoes
- Some chopped fresh basil leaves

- Extra virgin olive oil
- Chopped chives
- 2 garlic cloves, minced
- 1 chopped onion
- 200 gr of crushed tomato

Put the oven to preheat to 250 degrees. Cook the lasagna plates according to the manufacturer's instructions until al dente. Drain the pasta and align each of the plates on a parchment paper on a cookie sheet.
For the filling, in a large bowl mix the beaten egg white with the ricotta cheese. Stir in the Parmesan cheese.
On the lasagna plates put a little of the mixture that we have prepared, and on it the tomato slices, and on top the mozzarella slices. Sprinkle with fresh basil and place a few lasagna plates on top.
Put a little olive oil in a frying pan and let it heat up. Brown the onion and garlic. When they are golden brown, add the crushed tomato with a little salt and pepper. And let it reduce for about 8 minutes.
Once you have the lasagna plates closed, put the tomato sauce on top, sprinkle more grated cheese and decorate with a little chopped basil.
Bake the lasagna for 30 minutes at 180 degrees.
